These cookies are no exception. The perfect blend of pineapple and coconut.

6 Tbsp butter
1/2 cup sugar
1 egg
1/2 tsp. vanilla
1 1/2 cup sifted flour
Cream butter and sugar; add egg and vanilla. Sift flour and measure and sift again w/ salt. Add soda to pineapple and mix well. Add this to creamed mixture alternately with the dry ingredients. Drop on greased cookie sheet by rounded teaspoons.1 egg

1 1/2 cup sifted flour
1/4 tsp. salt
1/3 cup silvered almonds(optional)
1/2 cup undrained crushed pineapple
1/4 tsp. soda1/3 cup silvered almonds(optional)
1/2 cup undrained crushed pineapple
Bake at 375 for 10 minutes.
Cool and frost.
Frosting: Heat together 2 T. butter and 2 T. milk. Add 1/2 t. vanilla and enough powdered sugar to spreading consistency. Beat well.
Dip in coconut while frosting is still wet.
