Mexican Casserole

If you're in need of a new casserole meal that both adults and kids will love,
this is it.
It's also one of those recipes that is even better the second day.
1 pound lean ground beef
2 cups salsa
1 can refried beans
3 cups tortilla chips, crushed
2 cups sour cream
1/2 cup chopped onions
1/2 cup chopped tomato
1/2 cup chopped fresh cilantro
2 cups shredded cheddar cheese

Preheat oven to 350ยบ
In a large skillet, brown ground beef. Stir in salsa, reduce heat, and simmer until liquid is absorbed (about 10 minutes, depending on how thick your salsa is.) Stir in beans and heat through.
Spray a 9x13 baking pan with cooking spray. Spread crushed chips in a layer on the bottom, then add ground beef mixture. Spread sour cream on top. Top with onion, tomato, cilantro, and, cheese.

Bake for 30 minutes or until bubbly.

  1. this sounds really good, but somehow, I am just not good at casseroles...although I always enjoy the ones you prepare....go figure

  2. Okay--I'll try it. Your cookie dough brownies were the BIGGEST hit over Labor Day with my in-laws by the way.
